Weekly Plan and Menu's 5/4

Well, the weekly plan is up late this week...we've had a few kinks.

I just got back from round up at my dad's ranch in Oklahoma. We have this heavy work day of his cattle two times a year. Friends and family from all over come together and get a TON of work done in two days. I look forward to it all year.

When we get home we are usually exhausted and sometimes sunburned. We are NOT however usually on crutches!

We had an accident this year and my oldest son, Dillon is hobbling around in a leg-brace and using crutches. I had planned on making a post for tomorrow about roundup and putting in a few pictures of the cattle working action. Instead, tomorrow I'll be posting about Dillon's accident instead. I may go ahead though, and describe round up in more detail and just use the pictures from this time last year.

Anyway, here are the plans and menu's this week. Menu items are in red.

Weekly Plan and Menu's 4/27 - 5/1

I started my very first carnival this past week. It's called From To-Do to Ta-Da and I made my first post on Saturday night but it can be done anytime, if you'd like to join in too. It is a look at how we did in our week. A report of progress we made, things we might need to modify and just overall accountability...

I missed only one of my menu items for the week, Chicken Fettuccini, so I'll be repeating it this week. We are leaving to do the spring round up (of cattle) at my dad's ranch this next weekend, so I only needed to plan through Friday this week as well.

Round up's are so much fun. My whole family gets together and we work cattle all day on Saturday and Sunday. We all bring really good food for the lunches, so those of us who aren't actually in the lots working cattle are in the kitchen visiting and putting the finishing touches on our food. I do a little bit of both, but there are some people who come and don't even work cattle at all, they just come to visit and watch...and eat!

Now for the plans and menu's this week. Menu items are in red.

Weekly Plan and Menu's 4/20-4/28

Last week my baby, Abigail turned four. Boo-hoo, my baby is growing up too fast! We had a great party though. My mom and brother came up from Oklahoma and we took all the kids to the circus. We then came straight home from that and got ready for a few more friends who were coming over to join us for hamburgers and hotdogs. Thankfully the weather cooperated and we were able to grill outside for that. I brought out her birthday cake and she loved it when we sang happy birthday to her. Abby had decided on Friday that she wanted to change from a Spongebob cake to a "pink heart cake with purple on it". That was easier so I went with it!

With all the snow and rain we've been having lately, I'm a little behind on my gardening. I looked up the weather and it looks like it's going to be a great week for sunshiny gardening! So hopefully this week I can catch up a little bit in this area. Maybe if I'm lucky I'll have pictures on Friday for my gardening blog entry. My camera has been in Oklahoma for a couple of weeks (in case you didn't notice the lack of pictures) but thankfully my mom brought it back to me yesterday so I'll be able to blog more about things that we need pictures of.

It looks like it will be a busy week. I keep thinking that one of these weeks will slow down a little, but it seems like there is always a lot to do that needs to be done as soon as possible. So here is the schedule for the week. To-do items in black, dinner/menu items in red.

Monday

Morning routine
Weekly shopping trip
Pictures of thrifting for blog
pickup free Redbox movie
clean laundry room
Call Jess to confirm hair appt.
check ironing
Picture project pictures and blog post
Spaghetti for supper

Mon-I had to put off the trip to town until tomorrow or Wednesday. My brother in law is going to have gall bladder surgery and they have given me their youngest to watch. That makes two four year olds in the house! I might not get as much done the next couple of days, but it should make for some great pictures of Abby and her cousin.

Tuesday

Morning routine
Baked Potatoes in Crock Pot for tonight's supper

Prep Day with pictures for blogging
  • Mixes

  • Muffins

  • Cookies
Hair appointment

Tue- Today was a bit hectic as well, but I got to town to pick up the groceries we needed (from yesterday). I didn't make it into the garden, but I guess I can spend a bit longer there on Friday to make up for it and I'll plan on making those reunion calls Wednesday or Thursday evening.

Menu Plan for 3/8

This past week has been so hectic. It was a struggle to even get my normal day to day "must do" items accomplished. I found myself driving six hours trips on two of these days and having impromptu meetings that I needed to attend that took up good portions of my time and made my to-do lists hard to finish. It was such a blessing to have my dinners planned. Even though, on Thursday I was in a car and couldn't go with the plan (McDonald's dollar menu to the rescue!), it made days that I was home at dinner so much easier when I knew what I was fixing and everything was ready to go.

Here's the menu for this week:

Monday

Grilled Stuffed Burritos
Rice
Salad

Tuesday

Santa Fe Chicken
scalloped potatoes
green beans
Salad

Wednesday

BBQ sandwiches @ mother in laws
for my father in law's b-day

Thursday

Pork Steak
mashed potatoes
green beans

Fri-Sun
I'll be travelling to Oklahoma again, so no menu's planned.

Be sure to visit I'm An Organizing Junkie for even more menu ideas!

Menu Plan Monday

For the month of February, I am trying to eat out of my freezer and pantry and ONLY purchasing great deals. We'll see how far in the month I can get. It will be a fun experiment and even if I don't make it the whole month, at least I will be gaining some room in the freezer and pantry for all the yummy vegetables that I will get from my garden this summer!!

This week:

Monday

Chicken Cheese and Rice Casserole
Broccoli
5 minute Bread

Tuesday

Salisbury Steak
grilled potatoes with onions/peppers
Potato Bread

Wednesday

Chicken Pot Pie
Salad

Thursday

Tacos
Spanish Rice

Friday

Pepperoni Pizza

Saturday

I'm cooking for my mother-in-law's birthday at her house but my sister-in-law and I are bringing all the food and cleaning it all up.

I'm bringing/cooking:
Creamed can
hot dog buns
making a strawberry cake with white icing (pink flowers and green foliage and writing)

my sister in law is bringing:
salad or relish tray
ice cream
chips
condiments

Sunday
Breakfast for Dinner
Bacon
Waffles

What are you making for dinner this week? If you need a little more inspiration, head on over to OrgJunkie's site and take a look at what other people in the blogosphere are having for dinner.

Menu Plan Monday

Photobucket

This week everything on my menu is made from items in our freezer and pantry. I am still planning a shopping trip tomorrow, but Dillons has their mega sale going on, so I wanted to use as much of the grocery budget as I can to stockpile good deals. Hopefully that means I can put whatever we DON'T spend towards our debt snowball.

As always, breakfasts are fend for yourself from the choices onhand (cereal, oatmeal, usually some kind of muffin or breakfast bread, etc)

Lunches are leftovers from the night before, or soup/sandwiches from pantry

Monday:
Pork Chops
Baked Potatoes
Corn on the Cob

Tuesday:
Chicken Fettuccini w/Alfredo sauce
Broccolli
Bread

Wednesday:
Hashbrown Casserole
Little Smokies
Vegetable

Thursday:
Beef Stew
Cornbread

Friday:
Sausage Pizzas
Salad

Saturday:
Creative Leftovers (check back later in the week. I will use this recipe for a recipe swap.)
with Stir Fry veggies

Sunday:
Roasted (in crockpot) Chicken
roasted potatoes
and veggies

And that will be our week of meals. So what are you having? If you need a little more inspiration, be sure to check out OrgJunkie's site to see what other people around the blogosphere are having.

Have a great week!

Menu Plan Monday

Well here I am again, doing my Menu Plan for the week. You'll see that almost every day I'm using Five Minute Bread. You should definately go look at that link. I mixed it up on Saturday and will start using it on Monday. Supposedly the bread can just sit in the fridge and then you just bake it as needed all week. If it works I'll be doing that every week! Here's the plan:

Monday

Baked Potato Soup
Salad
Five Minute Bread

Tuesday

Shake & Bake Chicken
(go see my homeade version of shake and bake for frugality and great taste!)

Scalloped Potatoes
Salad (it's on sale at Dillon's this week, 10/$10)
Five Minute Bread

Wednesday

Hillbilly Goulash

Spinach

Five Minute Bread (unless we’re tired of it…then cornbread)

Thursday

Waffles or Pancakes

Bacon

Friday

Pizza night

Salad

Saturday

Cowgirl Beans

Corn on the cob

Five Minute Bread

Sunday

YOYO Meal

(Your On Your Own. Leftovers or fend for yourself!)

Menu Plan Monday

One of the blogs I follow has a menu plan Monday and other's will link their meal plans to her blog. I am going to start posting my meal plans on my blog, but I don't think I'll link to her's just yet. I'll get a bit more experience blogging first before I jump into something like that. If you are interested in looking at the other mealplans, go have a look here.

I've been planning meals a week at a time for ages, but I'm changing the day I do it now to Mondays because of this blog thing. What I usually do is get a piece of paper and pencil or pen and look at the sale flyers for good deals. I know when something is a good deal because I keep a price book. With this in mind, I take a walk to the freezer and the pantry to see what I have on hand. I have some meal ideas in mind while I'm looking around. Then I go sit down somewhere and plan it all out. After I've got my menu, then I shop my freezer first. I pull what I need for the first half of the week and put the 2nd half on top to get before the weekend. I make notes of whatever meats/freezer items I still need to buy for the mealplan. Then I shop my pantry. I list whatever I still need to buy and I look over my perpetual grocery list for items that we're running low on that I should pick up. I also look at the sale ads and compare with my price book to plan on purchasing things that I stock in the pantry or freezer that are on deep discount or that I might have coupons for.

All that said, here is my week of menu's:

Monday

Leftover stew from two weeks ago (I made a large batch, divided into thirds, used one then and froze two for other meals...saves from eating the same thing day after day)
Grilled cheese to accompany (Abby loves grilled cheese sandwiches)

Tuesday

Fettuccini Alfredo

boil 2lbs fettucinni, melt a stick of butter and then add 1/4 or so of flour. When your rue thickens up, add in about 2c cream, half and half or milk richened up with butter (whatever's on hand). Add a little garlic, salt, pepper and 1/2 c parmesan and pour over the noodles.
Serve with Broccolli and Oatmeal Bread. I make the dough in the bread machine and cook it in my oven especially in the winter.

Wednesday

Hash Brown Casserole I have some potatoes I need to use up that I bought on sale. Also, I use cottage cheese in place of the ricotta. It's on sale this week at my grocery store and it's always cheaper than ricotta.

I am serving this with Bacon as it is also on sale this week

Biscuits (I have a homemade version of Bisquick mix that I keep on-hand to make biscuits from. It's as easy as canned and much much cheaper to make)

Thursday

Chicken Lo Mein

boil box of spaghetti while you're cooking chicken (whatever cut is cheapest) in wok. Season with salt, pepper, garlic and ginger. When the chicken finishes take it out and add the veggies in. I use onion, garlic and a frozen oriental mix (or what I have on hand if I don't have that). When veggies start to get tender, make your sauce by combining 2 T sesame oil to 6T soy sauce (I usually double that amount to feed my crowd, but that ratio is probably for the normal serving size.) The sesame oil is the key ingredient to get that oriental taste...so I wouldn't substitute that.

I don't make anything to go with Lo Mein since it's pretty much an all in one meal, but I usually make some type of dessert for anyone with a sweet tooth after eating.

Friday

Pepperoni Pizza

Crust:
2T yeast dissolved in 2C warm water

Combine:
2t sugar
2t salt
4T oil
5 c flour

mix yeast mixture to dry mixture and knead for about 5 minutes or so and then roll and stretch to put into pizza pans. Bake 450 12-15 mins. This will make two pizzas, adjust recipe as needed. I find that even for all our kids, that two is usually enough if I will put out other things to nibble on, veggies with dip, etc. I will throw on another if they have friends over.

For the sauce, take 8oz tomato sauce, add pinch of italian seasoning, dash each of garlic powder, onion powder and pepper and a palmful of sugar. This will make 2-3 pizzas.

You will also need toppings. This week we're having pepperoni (purchased a bag for 1.00 and it will make about 4 pizzas or so.) You can also put ground beef, chicken, I've even used hotdogs...I know it sounds gross, but it's not as bad as it sounds...Abby loves it!

Saturday

Southwest Lasagna Rolls I bought lasagna noodles on sale some time ago and this looks good. I use homeade chili from my freezer (again, I use one, freeze two) and cottage cheese instead of ricotta for money saved.

I will serve with a large salad and potato rolls. I make the dough in my bread machine and make into rolls to cook in the oven.

Sunday

Red Beans & Rice (is a recipe really necessary for this?)
Salad
Cornbread

Monday (as I'm making my shopping days Tuesday now, I thought I would add on Mon/Tue for next week as well.)

Fried Venison
mashed potatoes and gravy
canned grean beans
freezer rolls

Tuesday

Cheeseburger Bake

Jar of Spaghetti Sauce plus enough water to cook pasta (3 cups or so)
noodles (elbow works best and is cheapest)
lb of beef or sausage, browned and crumbled
veggies as desired (I always use onion, add others that I need to use)

Dump it all in casserole dish, cover with foil, and bake 30-40 mins until pasta is done. Add cheese to top and put back into oven until melted and yummy.

Tomorrow I will go shopping for this menu. I already have everything I need for Monday. I will check back tomorrow (hopefully) with shopping lists. Then I will continue posting menu's on Monday's and maybe I'll have enough guts to post mine with Orgjunkie's next week.
